From my RV kitchen
Desert Hot Springs, CA is located in a cluster of posh towns that enjoy the attention of former presidents and movie stars - Palm Springs, Palm Desert and Rancho Mirage. Known for their healing hot non-sulfuric mineral water, several RV parks and resorts in Desert Hot Springs sport hot tubs and swimming pools brimming with the stuff. Ingredients
2T finely chopped fresh rosemary
2T finely chopped fresh thyme
4T minced fresh garlic
1 to 1 1/2T kosher salt
1/4 c extra virgin olive oil
1 1/2 pound pork tenderloin - trimmed of fat and silver skin
How-to
Combine rosemary through olive oil in small bowl and mix well. Pour herb and garlic marinade over pork loin and coat meat. Wrap tightly in plastic wrap and refrigerate overnight.
The next day:
Preheat oven to 350 degrees and cook pork for approximately 40 minutes or until the internal temperature reaches 160 degrees (test with an instant read meat thermometer).
