Key Lime Pie - Key West, FL

 
Makes: a delicious pie     Difficulty: Very Easy     Meal: Dessert     Great for potlucks!

From my RV kitchen

Ernest Hemmingway knew it. So did John Audubon and Mel Fisher. Key West is a place like no other with warm sunny laid back days and spectacular sunsets (don't miss Mallory Square's Sunset Celebration). Only 90 miles from Cuba, Key West is the southernmost point in the continental United States. You can visit the southernmost point, see descendants of Hemmingway's six-toed cat, and get in on the secret at Nancy's Secret (and amazing) Garden hidden on Schoolhouse Lane off Simonton Street in Old Town.

Munch on a Cuban sandwich (please do try one) or enjoy a con leche (yummy coffee and milk beverage) at Five Brothers Grocery or treat yourself to some open air dining at one of the island's little known gems - Salute' - on Higgs beach.

Find Key West camping - either on the island or just up US 1 - by Googling "Key West Camping". Parking is relatively easy in town and since Key West is a 4 mile by 2 mile island you'll most likely find it easily walkable.

Careful, you might never want to leave!

 

Ingredients

Key Lime Pie filling:

1 9" graham cracker pie crust (can substitute a 9" Oreo cookie crust for a new flavor sensation)

3 egg yolks

14oz can sweetened condensed milk (regular or fat free)

1/2 c Nellie & Joe's Key West Key Lime Juice *

Lime to garnish and fresh raspberries if desired

Whipped Cream:

1 c heavy whipping cream

2 heaping T powdered sugar

1/4 t pure vanilla extract

How-to

Pie Filling:

Combine egg yolks, sweetened condensed milk and Key Lime Juice and mix well with a whip or hand blender. Pour into

pie crust. Bake at 350 degrees for 15 minutes. Remove from oven and allow to cool for 10 minutes. Refrigerate at least one hour or even better overnight.

Whipped Cream:


Combine all ingredients and whip until peaks into a stiff cream. Taste and add more powdered sugar as desired.

Serve the Key Lime Pie:

Top a slice of pie with a spoonful of whipped cream, add a lime slice to garnish, and raspberries if desired.
